Pasta Salad

The thing about making pasta salad is that I usually make 5-6 portions at one go, pack them into individual lunch box and store them in the freezer which can save me alot of cooking time.




Ingredients:

- Pasta (your preference - I usually use durum wheat pasta)
- Pasta sauce (your preference - I like tomato and mascarpone sauce to go with salad)
- Sweetcorn
- Peas
- Crushed dried chilli
- Basil
- Olive oil


Instructions:

- Cook the pasta as per the instructions on the package, add salt to taste and olive oil to bring it to boil so that they will not stick together
- After pasta is cooked, drain and re-drain with cold water to prevent sticking
- Add all other ingredients and toss well
- Salt and pepper to taste

This is a very flexible recipe so do add anything you fancy and also more greens for a healthy and balance diet :)
