This is a classic recipe of herb roasted potatoes as a side dish to your main course or if you add more root vegetables it can even be a simple meal on its own.

Indregients:
- Potatoes (cut into wedges if they are the normal baking potato)
- Olive Oil
- Rosemary
- Basil
- Oregano
- Salt
- Pepper
(root vegetables may be added to your preference)
Instructions:
- Preheat oven
- Mix all the ingredients together, add salt and pepper to taste
- Wrap everything (except vegetables) in aluminium foil
- Bake for 40 minutes
- Unwrap the aluminium foil and add the remaining vegetables, then without wrapping it, put it back to the oven and bake for another 20 minutes
- If no vegetables are used, then just unwrap the aluminium foil and bake it for another 20 minutes so the potato skin will be crispy
