Chinese New Year - Peng Cai

There are a couple of CNY entries which are long overdue but I figure better late than never :p

These 2 pots of Peng Cai were delivered to our place on new year's eve consisting of a basket of steam fish, roast pork, prawns and crab and a second casserole of shark fin, scallops, abalone and sea cucumber.





A quick and fuss free option for families who choose to have their reunion dinner in the comfort of their homes and crave for a few extra dishes.

At $200+, it is definitely not something which is really worth the money unless on special ocassions as such. Most importantly, chinese new year = you happy i'm happy everyone happy =)

Chiquito - The Original Mexican Grill & Bar

Centretainment, just 2 tram stations away from Meadowhall, is pack with entertainment outlets with a huge cinema, bowling centre and various restaurants to choose from.

We were intially undecided about what to have for dinner after a day of shopping and with the nachos looking good, we settled for some Mexcian food @ Chiquito.





Waited roughly 20 minutes at the bar before a booth seat was available.



Ordered a Ceasar Salad Nachos to fill our very hungry tummy before the mains but the very generous portion of nachos and cheese made it almost a meal on its own!



I had the Vegetable Poblano Quesadila served with vegetables in Mexican chilli-chocolate sauce and grated cheese. Chilli and chocolate don't sound exactly like the perfect match isn't it? And no, I couldn't get use to the taste so there goes my main mostly untouch...



The partner ordered a Sizzling Prime Steak Fajitas with the beef being too dry despite a layer of onions and peppers separately it from the sizzling plate.



The main courses might not be the best but we have fun using our fingers, enjoying the meal with lots of different dips at Chiquito which added to the 'fun' factor and coupled with the relaxing atmosphere of the restaurant and very attentive staff, this is definitely a good place to unwind after some crazy shopping over at meadowhall!

SIA in-flight Yu Sheng

In conjunction with Chinese New Year, there's a choice of braised fish fillet with yu sheng (raw fish salad) on board the SIA fight bound for London.





A nice finishing touch to my 10 day's break back in Singapore...

Mandarin Oranges - Chinese New Year

These honey mandarin at home all dressed up for Chinese New Year...3 more days to go!

Chocolate Coated Digestive Balls

This is another self-created short-cut non-bake recipe so there's no waiting time...and it's really easy for beginners to fellow!
Like the title suggests, the digestive balls are made of cheesecake-base inspired dough rolled into tiny balls and then coated with a layer of melted chocolate.



Ingredient:

- Digestive biscuits
- Butter
- Milk chocolate
- Milk
- Rainbow sprinkles (or chopped nuts) to garnish

Instructions:

- Crush the disgestive biscuits till fine
- Add in butter bit by bit into the crushed digestive biscuits till it forms a dough
- Roll the dough into balls
- Place the dough in the freezer for 10 min to harden

- Break chocolate into pieces and add about a tablespoon of milk for every 200g of chocolate
- Place them into a microve for 30 seconds
- Melt well

- Remove the digestive balls from the freezer and place them into individual cookies case
- Add the melted chocolate into the case
- Lastly, some rainbow sprinkles to ganish

Mini Vacation

Just touched down in the brand new terminal 3 this morning after a 12 hours flight.





It being such a last minute decision, I've forgotten to bring with me my Singapore sim card amongst many other stuff back home.
